Anyone know what these are? I just "re-found" them as I was clearing the cupboard above the V for routing the cables for the windlass. (yes, windlass :D ). Maybe they are not even related to the boat, but possibly I am missing out on some greater purpose that would make my life even better?

Just a guess, but they appear to be 'discs' left behind from cutting holes with a hole saw judging from the from the small drill holes in the centre, perhaps from original construction or past PO mods.

They are too well finished for that. They are polished on all surfaces, including the edges.

Prehaps hole saw cut outs, cleaned up then a small wood strip put behind opening and a screw to hold round piece flush and matching...... But the small ones are very small....

I've come around to thinking they possibly had nothing to do with the boat, but rather something personal of the PO. They now reside in a large plastic box in my garage with miscellaneous items.
