Here's mine

The skeg is a 2" by 1/4 stainless flat bar with a piece of stainless 3/4 angle welded to the top of it

Attached are photos of the aluminum skeg on Isabel. Magnesium anode is on the skeg which is more reactive than Al. Boat is in freshwater and skeg has been on about 5 years at this point. There is an oxide coating on the skeg, but little corrosion. I have replaced Mg anode once. Not sure about salt water, but for freshwater this seems to be a satisfactory replacement.

Two design considerations.
1. The shoe must be rigid enough to resist bending.
2. The shoe must be able to be removed for replacement.
The shoe will be at the point of deepest draft therefore can take a knock running aground.
Running aground is not serious (and for me quite common!) but if the shoe bent and jammed the rudder then that would be serious.
Oak would splinter but not bend. Elm would be an even better wood immersed.
