rtgc, that look fantastic! Is the new door flush mounted or does it fit recessed into the microwave opening? What kind of hardware keeps it closed?

I removed the microwave from our 36ET. Like the rest of you, I never used it. I replaced it with a really nice Breville toaster oven that fits the space perfectly. We use that a lot.
For the toaster oven, it gets fairly hot, so I take it our of the cabinet and use it on the counter. The cabinet is just for storage. Sometimes the T.O. stays on the counter and the Nespresso espresso maker gets stowed.
We don't have a generator, but I have a lot of batteries and a really nice basic pure sine wave inverter. 10 golf cart batteries for the house and the inverter, an 8d start battery and a bow thruster battery. The goal is to be a 12 volt boat. At this point, the only 120 volt AC items we have aboard are the toaster oven and the Nespresso. Of course I still need AC for various phone and tablet chargers, etc.
The inverter/charger is a 2500W Sterling. Got a great deal on it from Bay Marine Supply. Their price was almost too good to be true. It doen't have optional bells and whistles like automatic generator start, but then, I don't have a generator. All I care about is good clean AC power because the Toaster Oven and the Nespresso won't work properly if it is not pure sine wave. In fact the Nespresso shuts off if it detects modified sine wave.

It is also a smart (4 stage) charger for the batteries. It is the same as a pro mariner inverter. Sterling has now entered the US market. Up until recently they built the inverter/chargers for pro mariner and branded them as such for the US market.

skills but finish carpentry isn't one of them.
The door is fitted to the opening and has a spring loaded latch to keep it closed. Didn't see
the need for a strap or anything to hold it open.

Slightly off topic, but I see a couple references to using the onboard butane stove. Am I being excessively persnickety in worrying about the heat from the stove and whatever pan may be on it affecting the surrounding fiberglass and gelcoat? 13 year old 28TE on which the butane stove has never been used.

My battery bank consists of the two 4Ds that came with the boat when I purchased it new in 2005. (They must be getting near the end but they are still going.) I do not have a genset, but I use a 1750 watt inverter to generate AC power and it appears adequate to meet my all my AC requirements (except the air conditioning).
I use the microwave a lot and there has never been an issue.
Since I do not anchor out overnight, the batteries get frequent re-charging from the engine running or shore power.

We use our butane stove a lot and are just careful to not use pots or pans that would extend over the butane canister holder.
