2001 Albin 28 thru hull

Just recently struck my prop on a rock ..damaged three of the four blades...prop repaired and was putting it on and noticed one of the two bolts on the exterior of the stuffing box was sheared off,
Satrted engine and water comes out around the seal the exterior of the stuffing box makes with the hull ....cant seem to find any pictures of what is involved to extract this bolt ...just wondering how things are put together down there ??? any pictures would be appreciated ...thanks again
